 y and mathematical physics we seek to find new phenomena\, like Gaussian b
 ehavior in the Central Limit Theorem\, which occur ubiquitously—in this 
 case\, for sums of independent random variables\, independent of finer det
 ails of what their distributions are. Often these phenomena are first obse
 rved in physics or number theory\, and the quest to understand them probab
 ilistically can be roughly divided into two steps:\n\n(1) Probing the limi
 t by computations with the nicest possible probabilistic models\, where ex
 tra algebraic structure pre-limit makes taking the limit possible\, and\n(
 2) Developing robust techniques to prove that the limit seen in nice cases
  indeed occurs universally.\n\nOften (1) is not simply superseded by (2)\,
  but instead nontrivial interplay develops between the algebraic structure
 s and the robust analytic techniques.\n\nI will discuss recent and ongoing
  chapters of this story concerning ‘discrete’ random matrices with ent
 ries living in the integers Z\, p-adic integers Z_p\, or finite fields F_q
 . Here the players are\n\n(1) Symmetric polynomials and random integer par
 titions defined using them (Macdonald processes)\, connecting to random ma
 trices through spherical functions on p-adic groups\, and\n(2) Asymptotics
  of random abelian groups\, and the ‘moment method’ (and its newer ver
 sions) used for proving their universality.\n\nNo background apart from un
 dergraduate probability and algebra will be assumed.
